Anyone who has traveled through Sicily knows: the islands pastry
tradition is very strong and highly personalized. The profound Arab
influence has produced a unique combination of ingredients, tastes,
fragrances and flavors. You can see this influence in the very famous
cannoli, the cassata, the sesame cookies and many other appetizing
sweets.
In this picture, one must also include all of the almond based sweets,
an antique and wonderful Sicilian tradition, particularly in the area of
Avola: la pizzuta d'Avola or Avola scelta is in fact a type of almond
unsurpassed for form and taste. And it is with this almond that one
makes confetti (candy coated almonds), marzipan fruit, the Torrone
of Caffe Sicilia and the Paste di Mandorla Profumi di Sicilia Nuova
Dolceria, almond based cookies presented in seven different flavors
and packaged as a mixed 1 lb. assortment: hazelnut, pistacchio, lemon,
orange, coffee, mandarin, and classic almond. Soft and tempting, they
can be enjoyed with pleasure at the end of a meal, perhaps
accompanied by a good passito, or dessert wine.
