Taralli are amongst the most famous of Puglian baked goods (as they
are in Basilicata and Calabria). Infamous for their moreishness, they
are savoury bits that are in fact as simple as they are delicious.
The Taralli of Puglia are at considerable risk of debasement, perhaps
more than other similar products. Created in a land that produces extra
virgin olive oil they tend increasingly to be made with really poor quality
oils and vegetable fats, just to save a few pennies. The Taralli from Puglia by Ciro Federico are made entirely traditionally,
using white wine and the finest extra virgin olive oil by Ciro Federico,
from Andria.
The resulting Taralli are authentic, aromatic, and really good,
with a fine, full flavor. These little savouries are a perfect Mediterranean
aperitif, perhaps accompanied by olives, anchovies and oil-cured
sundried tomatoes.
