The Salt Pans of Margherita di Savoia form a great spectacle, with their mounds of white salt standing proud against the pink-toned water (an effect created by the presence of tiny crustacea); this gives the overall impression of an eternal sunset.
This is one of Italy's most beautiful humid zones, a corner of Puglia
where salt pans have been carved out from marshland, thanks to the
work of a great engineer of the past, Luigi Vanvitelli - rather more
amed for the Caserta Palace than for this miracle of hydraulic
engineering. Here salt from the Adriatic - that most bitter sea
('amarissimo', something of a pun on 'mare') as it was termed by
the poet and novelist D'Annunzio - produced entirely by natural means,
is gathered today as it has been for centuries past.
'Light' is perhaps the most apt adjective to describe this salt, which
comes in the form of bright, flavourful crystals, ideal for seasoning just
about any dish with the light touch that is characteristic of the finest
sea salt.
While you can use it in every imaginable way, why not allow it to release
the scent of the sea encapsulated in those little crystals by sprinkling it
over a chunk of country bread rubbed with fresh, ripe tomato, then
drizzled with olive oil from Puglia?
